write a short recipe for spanikopita
I'll write a simple recipe for spanakopita, the classic Greek spinach and feta pie.
Spanakopita (Greek Spinach & Feta Pie)
Time: 1 hour | Serves: 6-8
Ingredients:
1 lb frozen spinach, thawed and drained well
2 onions, finely chopped
1 lb feta cheese, crumbled
3 eggs
1/4 cup fresh dill, chopped
Salt and pepper to taste
1 package phyllo dough (about 20 sheets), thawed
1/2 cup olive oil or melted butter for brushing
Instructions:
Preheat oven to 350°F (175°C).
Mix spinach, onions, feta, eggs, and dill in a large bowl. Season with salt and pepper.
Layer 10 sheets of phyllo in a 9x13 baking pan, brushing each sheet with oil. Add spinach mixture.
Top with remaining phyllo sheets, brushing each with oil.
Score the top layers into serving portions and brush with remaining oil.
Bake 45-50 minutes until golden brown.
